This Father’s Day, treat your dad (and yourself) with the best meats of Rochester. All of our meats come directly from farms within 60 miles of Rochester, pasture raised without hormones or antibiotics or steroids. We bring in whole carcasses cut in halves or eighths, and break them down in our shop using old school butchery skills. We dry-age our fresh cut ribs and loins (we do not use pre-sealed “wet-aged” meats for dry-aging)in our temperature and humidity-controlled dry-age chamber to intensify flavor and taste. This whole process takes time and effort and that’s what our dads deserve. This year, our Father’s Package includes a half bone 50-day dry-aged ribeye steak, a 1lb dry-ages top sirloin steak, and a thick one-bone pork chop, (total value of $65) at $60.
